This is a great dessert to prepare ahead and leave for the flavours to infuse.
Ingredients:
1 x unfilled sponge
Mixed berries
Sherry
Custard
Cream
METHOD:
Break up half of the sponge and lay in the bottom of your dish/bowl
Use sherry or another alcohol-based beverage to splash on top and press down. Alternatively, use the juice from the berries which I use as well as the alcohol and this is just as nice on its own.
Whip the cream, leaving enough for a thin layer on the top and mix with cold custard, be it homemade or store-bought.
If using frozen mixed berries, thaw them out and sprinkle 1 tbsp icing sugar over them and leave in the fridge for 2-3 hrs for the juice to form.
Put the berries on top of the sponge and pour half the custard-cream mixture on top. Then add another layer of sponge with the alcohol/juice, add more berries and top with the remaining custard cream mixture.
Put in the fridge for the flavours to infuse for 2hrs minimum.
Lastly, cover with a thin layer of whipped cream and top with fresh berries of your choice or whatever is in season.
